I’ve been working in an office since May and I’m still trying to get the hang of lunches. I have weeks where I make a big batch of something and pack it and I have weeks where I totally wing it. I usually buy something once a week which feels fine—I walk to work so I’m saving money on commuting (or that’s what I tell myself). When I work from home, I often make something with eggs for lunch and eat more snacks throughout the day but eggs do not travel well.
But, since it’s been a few months, I wanted to share my greatest hits of lunches as well as the ingredients I keep on hand for better lunches. If you’re like, this is not a recipe, I hear you, but we all have to eat lunch (and I have lots of recipes here)! This is also a plea for you to share your favorite (vegetarian) lunches with me in the comments! I’m always looking for new ideas that don’t take a lot of time to assemble!
Office Foods I’m excited to eat:
Sesame Noodles (NYT Gift link) —You can add any protein you like to these and they are so good with sliced cucumbers and peanuts.
