Are you ready for July’s recipe? I was cooking with Tilden last night and we made a spicy green sauce, which we’ve made many times together. I took notes since I realized I had to share it with you (we’ve never written it down before so I’m glad to have it for myself as well). Tilden and I met freshmen year of college and we were roommates junior year. We’ve cooked together in so many kitchens of various size and quality (most recently in a stunning log cabin in Maine) and it’s always a blast. We play music, gossip, reminisce, drink wine or Ghia (client), and collaborate over a meal. If you’d like to make this, make it with a friend!
We usually serve this sauce with something corn or plantain based, like tostones, arepas, or pupusas. It would also be great on eggs, with a quesadilla, or drizzled over a simple bowl of rice and beans (a great lunch or dinner) We got some inspiration from Labhco for this one but make it differently and without a written recipe (until now), tasting as we go. Tilden has a Nutribullet blender and you can also use an immersion blender or regular blender for this. It’s bright and zesty and truly a ritual I look forward to, just like quality time with my friend. I also love that you don’t really have to chop beyond trimming the scallions and cutting limes in half. The blender makes short work of soft herbs. There are many green sauces around the world and this is not claiming to be any of them, but it is delicious! I hope you enjoy it.
