Hi friends,

Last Wednesday, I was packing up for our trip to Vermont (full recap coming on Monday) when I got a surprise facetime from Molly. We caught up a bit and then she showed me the reason for her call: a large sweet potato that had been hanging for a few weeks on a shelf.

She was thinking ahead to dinner and wanted some ideas. I’m sharing my answer…
