This month’s recipe has been getting me through Mondays all summer long. It’s always made with Julia, my former roommate and forever friend, who I watch the Bachelor Franchise with every week (Julianne also joins but she eats separately). We text each other every Monday afternoon to confirm what we’re bringing and can make this in about 40 minutes, no sweat. It’s never the same but it always satisfies.
Here’s why this bowl is perfect for a Monday:
It contains vegetables, which I always crave after the weekend.
It is a vehicle for toppings with very little cooking, which makes it doable on a Monday.
You can make extra and have it for lunch the next day.
You can choose a sauce that matches your mood.
You can grocery shop once and make this a lot (Tofu keeps for a while in the fridge/freezer and so do the sauces and toppings, just swap out the veggies).
